  • 10 fresh mint leaves per serving, gently bruised
  • 1 medium lime, cut into wedges
  • 2 teaspoons granulated sugar or 1 tablespoon simple syrup (adjust sweetness as preferred)
  • 1 cup (240 ml) chilled fizzy club soda per serving
  • Ice cubes, plenty to keep the drink cool
  • Optional garnishes: lime wheel or wedge, sprig of mint

Instructions

  1. Fill a tall glass about halfway with ice cubes.
  2. Add 10 fresh mint leaves and 2 teaspoons granulated sugar (or 1 tablespoon simple syrup) into the glass.
  3. Gently muddle the mint and sugar together using a muddler or the back of a spoon, bruising the leaves to release oils without pulverizing.
  4. Squeeze juice from 3 lime wedges into the glass, then drop the wedges in.
  5. Stir the mixture gently to combine and dissolve the sugar.
  6. Pour 1 cup (240 ml) of chilled fizzy club soda into the glass and stir gently to distribute bubbles and lift mint leaves.
  7. Garnish with a sprig of mint and a lime wheel on the rim, then serve immediately.

Notes
