A quick and easy summer cocktail blending frozen watermelon, dry rosé, fresh mint, lime juice, and simple syrup for a refreshing, icy treat perfect for hot days.

  • 4 cups seedless watermelon chunks, frozen
  • 1 ½ cups (12 fl oz) dry rosé wine, chilled
  • 1012 fresh mint leaves, plus extra for garnish
  • Juice of 1 lime (about 2 tablespoons or 1 fl oz)
  • 2 tablespoons (1 fl oz) simple syrup, adjustable to taste
  • 1 cup (8 fl oz) ice cubes
  • Optional: splash of club soda or sparkling water
  • Optional: pinch of sea salt

Instructions

  1. Freeze the watermelon chunks in a single layer on a parchment-lined baking sheet for at least 4 hours or overnight.
  2. Prepare simple syrup by dissolving equal parts sugar and water over medium heat; cool before use (if making homemade).
  3. Rinse and pat dry mint leaves; juice the lime to get about 2 tablespoons of juice.
  4. In a high-speed blender, combine frozen watermelon chunks, chilled rosé, simple syrup, lime juice, ice cubes, and mint leaves on top.
  5. Blend on high speed for 30-45 seconds until smooth and slushy, scraping down sides as needed.
  6. Taste and adjust sweetness or lime juice as desired; blend briefly again to mix.
  7. Pour into chilled glasses and garnish with a sprig of fresh mint and a small wedge of watermelon on the rim.
  8. Serve immediately for best icy texture.

Notes

Use a dry rosé to avoid overly sweet flavors. Add mint last and pulse briefly to prevent bitterness. For a bubbly finish, add club soda just before serving. Let frozen watermelon sit 5 minutes at room temperature if blender struggles. Store leftovers in freezer and stir well before serving; avoid refreezing multiple times.
