Refreshing Watermelon Mint Slushie with Lime

A quick and easy summer drink combining juicy watermelon, fresh mint, and zesty lime for a refreshing icy slushie that’s perfect for hot days.

  • 4 cups (600 grams) watermelon, cubed and seeds removed
  • 1012 fresh mint leaves, roughly chopped
  • Juice of 2 medium limes (about 2 tablespoons or 30 ml)
  • 1 to 2 tablespoons (1530 ml) honey or agave syrup (optional)
  • 2 cups (about 300 grams) ice cubes
  • Pinch of sea salt

Instructions

  1. Cut about 4 cups (600 grams) of watermelon into cubes, discarding seeds. Keep the watermelon chilled before blending.
  2. Add watermelon cubes and 2 cups (300 grams) of ice cubes to the blender. Pulse on high for 30-45 seconds until the mixture is icy and smooth but still thick.
  3. Add 10-12 roughly chopped fresh mint leaves and juice of 2 limes (about 2 tablespoons/30 ml). Blend for another 10-15 seconds to incorporate the mint without pulverizing it.
  4. Add 1-2 tablespoons (15-30 ml) of honey or agave syrup and a pinch of sea salt. Blend briefly to combine.
  5. Taste and adjust sweetness or lime juice as needed. If too thick, add a splash of cold water or lime juice and blend again.
  6. Pour into chilled glasses immediately. Garnish with a sprig of fresh mint or a thin lime wheel and serve.

Notes

Freeze watermelon cubes for 2-3 hours before blending for a thicker slushie without diluting with too much ice. Pulse the blender instead of blending nonstop to avoid watery texture. Use fresh lime juice and mint for best flavor. Adjust sweetener based on watermelon sweetness. Serve immediately in chilled glasses for best texture.
