Refreshing Watermelon Mojito Slushie Cups

A quick and easy summer slushie combining juicy watermelon, fresh mint, lime, and optional rum for a refreshing and vibrant mojito twist.

Ingredients

  • 4 cups (600 grams) seedless watermelon, cubed and chilled
  • 1012 fresh mint leaves, gently bruised or muddled
  • Juice of 2 medium limes (about 3 tablespoons or 45 ml)
  • 1/2 cup (120 ml) white rum (optional)
  • 1/4 cup (60 ml) simple syrup or honey syrup
  • 1 cup (240 ml) sparkling water or club soda, for topping off
  • 2 cups (480 grams) ice cubes
  • Lime wedges and mint sprigs for garnish (optional)

Instructions

  1. Cube about 4 cups (600 grams) of seedless watermelon and chill in the fridge for at least 30 minutes.
  2. Place 10-12 fresh mint leaves in your blender or a sturdy bowl. Use a muddler or the back of a spoon to gently bruise the leaves to release oils without bitterness.
  3. Add 3 tablespoons (45 ml) of freshly squeezed lime juice and 1/4 cup (60 ml) of simple syrup to the mint. Stir or pulse a few times to combine.
  4. Add the chilled watermelon cubes and 2 cups (480 grams) of ice cubes into the blender. Blend on high for about 30-45 seconds until smooth and slushy but not watery.
  5. Pour in 1/2 cup (120 ml) of white rum (if using) and pulse a couple more times to mix evenly without melting the ice too much.
  6. If the slushie is too thick, add a splash of sparkling water or club soda to loosen it up. Blend briefly again for a creamy, frothy finish.
  7. Spoon into chilled cups or glasses. Top with a splash of sparkling water for extra fizz and garnish with lime wedges and mint sprigs.
  8. Serve immediately for best icy texture.

Notes

Use firm, ripe watermelon for best texture. Avoid over-muddling mint to prevent bitterness. Pre-chill watermelon and glasses for a colder drink. For non-alcoholic version, omit rum and add extra sparkling water or lemon-lime soda. Pulse blender in short bursts if struggling with ice. Avoid overblending to keep slushie texture.
