Ingredients

Scale
  • 1 cup fresh strawberries, hulled and sliced (about 150g)
  • 2 tablespoons granulated sugar (adjust to taste)
  • 1 tablespoon fresh lime juice
  • 1/4 cup (60 ml) good-quality blanco tequila
  • 1 cup (240 ml) ice cubes
  • 1/3 cup (80 ml) fresh lime juice
  • 2 tablespoons simple syrup (equal parts sugar and water, dissolved)
  • 1/4 cup (60 ml) tequila
  • 1 cup (240 ml) ice cubes
  • A handful of fresh mint leaves (optional)
  • 1 cup fresh or frozen blueberries (about 150g)
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1/4 cup (60 ml) tequila
  • 1 cup (240 ml) ice cubes
  • Coarse salt or sugar for rimming glasses
  • Lime wedges for garnish
  • Optional: a splash of triple sec or orange liqueur for added depth

Instructions

  1. Prepare the Strawberry Layer: In your blender, combine 1 cup hulled strawberries, 2 tablespoons sugar, 1 tablespoon lime juice, 1/4 cup tequila, and 1 cup ice cubes. Blend until smooth and slushy, about 30 seconds. Pour this mixture into a freezer-safe container and freeze for 30-40 minutes until partially firm but still pourable.
  2. Prepare the Lime Layer: Rinse the blender, then add 1/3 cup fresh lime juice, 2 tablespoons simple syrup, 1/4 cup tequila, 1 cup ice cubes, and optional mint leaves. Blend until smooth, about 30 seconds. Carefully pour this lime mixture over the strawberry layer, spreading gently to avoid mixing. Freeze for another 30-40 minutes until partially set.
  3. Prepare the Blueberry Layer: Clean blender again. Add 1 cup blueberries, 2 tablespoons sugar, 1 tablespoon lemon juice, 1/4 cup tequila, and 1 cup ice cubes. Blend until smooth and icy, about 30 seconds. Gently pour over the lime layer and freeze for at least 1 hour or until fully firm.
  4. Rim the Glasses: While the layers are freezing, prepare your glasses by rubbing lime wedges around the rims, then dipping them into coarse salt or sugar on a small plate. Set aside.
  5. Serve: Once fully frozen, scoop layers into the prepared glasses or carefully invert the frozen layers to serve in stacked form. Garnish with a lime wedge or fresh berries if desired.

Notes

Let each layer freeze partially before adding the next to keep layers distinct. Blend ice and fruit for about 30 seconds for the best texture. Fresh citrus juice is recommended for brightness. Chill glasses beforehand and rim with salt or sugar for added flavor contrast. You can prepare layers up to a day in advance and assemble before serving.
