  • Ginger ale or sparkling water to top off
  • Ice cubes

Instructions

  1. Prepare the ginger syrup: In a small saucepan, combine 3 ounces (85 grams) of peeled, thinly sliced fresh ginger, 1 cup (240 ml) honey, and 1 cup (240 ml) water. Stir gently to blend ingredients.
  2. Simmer gently: Place the pan over medium heat and bring to a low simmer. Let it cook for about 15 minutes, stirring occasionally. Keep an eye on it so the honey doesnโ€™t burn.
  3. Strain the syrup: Remove from heat and let cool slightly. Strain through a fine mesh sieve or cheesecloth into a clean container, pressing the ginger to extract all the flavorful liquid. Discard the solids.
  4. Chill the syrup: Let the syrup cool completely, then refrigerate until ready to use. It should keep for up to two weeks.
  5. Mix the cocktail: In a rocks or highball glass filled with ice, pour 2 ounces (60 ml) whiskey and ยฝ ounce (15 ml) fresh lime juice.
  6. Add the honey ginger syrup: Stir in 1 ounce (30 ml) of your homemade syrup. Taste and adjust if you want it sweeter or spicier.
  7. Top with ginger ale or sparkling water: Fill the rest of the glass with your chosen fizzy mixer. Stir gently once more.
  8. Garnish and serve: Add a thin ginger slice or lime wedge to the rim for aroma and presentation.
