  • 1 medium fresh lemon, juiced (about 2 tablespoons or 30 ml)

  • 2 cups filtered water
  • Optional: pinch of cinnamon or a small sprig of fresh mint

Instructions

  1. Peel 1 to 2 inches of fresh ginger root using a spoon to scrape off the skin, then slice it thinly.
  2. Pour 2 cups (about 475 ml) of filtered water into a small saucepan and bring it to a rolling boil over medium-high heat.
  3. Reduce heat to low and add the sliced ginger to the water. Let it simmer gently for 10 minutes.
  4. Remove the saucepan from heat and strain the liquid through a fine mesh strainer into a teapot or mug to catch the ginger slices.
  5. Squeeze the juice of 1 medium lemon (about 2 tablespoons or 30 ml) into the tea.
  6. Stir in 1 to 2 tablespoons of raw honey to taste while the tea is still warm but not boiling hot.
  7. Optionally add a pinch of cinnamon or a fresh mint leaf and let steep for a minute before removal.
  8. Serve immediately and enjoy the soothing warmth.
