  • 2 tablespoons popping candy (e.g., Zed Candy or Chupa Chups)
  • Lemon zest (optional, for garnish)
  • Salt or sugar (optional, for rimming base before popping candy)

Instructions

  1. Prepare the simple syrup by combining ยฝ cup granulated sugar and 1 cup water in a saucepan. Heat over medium heat, stirring frequently until sugar dissolves and syrup is clear. Remove from heat and cool to room temperature.
  2. Juice about 4 large lemons to get roughly 1 cup of fresh lemon juice. Strain to remove seeds and pulp if desired.
  3. Rim the glasses by spreading a thin layer of simple syrup or water on the rims. On a shallow plate, mix 2 tablespoons popping candy with a pinch of sugar or salt. Dip each glass rim into the mixture, twisting gently to coat evenly. Set aside carefully.
  4. In a pitcher, combine the lemon juice and ยฝ cup of the cooled simple syrup. Stir gently to mix.
  5. Add 3 cups of cold sparkling water and ice cubes to the pitcher. Stir gently to combine without losing carbonation.
  6. Garnish with lemon zest curls or slices if desired. Pour the lemonade carefully into the prepared glasses, avoiding disturbing the popping candy rim.
