  • 23 cloves
  • 45 black peppercorns
  • 1 tsp fresh ginger, thinly sliced or grated
  • 1 star anise (optional)
  • 1 tsp vanilla extract
  • 12 tbsp sweetener (sugar, honey, or sugar alternative)

Instructions

  1. Lightly crush the cinnamon stick, cardamom pods, and cloves using a mortar and pestle. Slice or grate the fresh ginger. Set aside.
  2. In a small saucepan, bring 1 cup (240 ml) of water to a boil. Add the crushed spices, sliced ginger, black peppercorns, and star anise if using. Let it simmer for 5 minutes to infuse the flavors.
  3. Add 2 black tea bags (or 2 tsp of loose-leaf tea) to the saucepan. Let it steep for 3-4 minutes, depending on your preferred strength.
  4. Add 1 cup (240 ml) of milk or your chosen milk alternative. Stir and bring the mixture to a gentle simmer.
  5. Stir in 1-2 tbsp of your preferred sweetener, adjusting to taste.
  6. Use a fine mesh strainer to remove the spices and tea leaves. Pour the chai latte into your favorite mug.
