A refreshing summer cocktail combining juicy watermelon, spicy jalapeño, and a tangy Tajín rim for a flavorful and textured margarita experience.

Ingredients

Scale
  • 4 cups (about 600g) fresh watermelon, cubed
  • 2 oz (60 ml) tequila blanco
  • 1 oz (30 ml) fresh lime juice
  • 1 oz (30 ml) triple sec or orange liqueur
  • 1/2 oz (15 ml) simple syrup
  • 23 fresh jalapeño slices (seeds removed for milder heat, seeds optional for extra kick)
  • 2 tbsp Tajín seasoning
  • 1 tbsp coarse sea salt
  • Fresh lime wedge for rimming glass
  • Optional garnishes: thin jalapeño rings, small watermelon wedges, fresh mint sprigs

Instructions

  1. Prepare the Tajín Rim: Mix Tajín seasoning and sea salt on a small plate. Rub the rim of your glass with a lime wedge to moisten, then dip the rim into the Tajín-salt mixture, twisting gently to coat evenly. Set aside.
  2. Puree the Watermelon: Place watermelon cubes into a blender and blend until smooth, about 30 seconds. For a pulp-free drink, strain the puree through a fine mesh sieve to extract about 1 cup (240 ml) of juice.
  3. Muddle the Jalapeño: In a cocktail shaker, add jalapeño slices and simple syrup. Gently muddle for about 15 seconds to release oils without overdoing the heat.
  4. Add Liquids: Pour watermelon juice, tequila blanco, fresh lime juice, and triple sec into the shaker with the muddled jalapeño and syrup. Fill the shaker halfway with ice and secure the lid.
  5. Shake: Shake vigorously for 15-20 seconds until chilled and well combined.
  6. Strain & Serve: Fill the Tajín-rimmed glass with fresh ice. Strain the margarita mixture into the glass. Garnish with a jalapeño ring or watermelon wedge if desired.
  7. Final Touch: Run your finger along the Tajín rim to appreciate the gritty, spicy texture before sipping.

Notes

Do not over-muddle jalapeños to avoid overpowering heat. Use ripe watermelon for natural sweetness and adjust simple syrup accordingly. Chill the glass before serving for best texture. Fresh lime juice is essential for brightness. Frozen watermelon chunks can be used if fresh is unavailable. Prepare watermelon puree ahead and keep chilled if desired.
