A visually stunning and delicious pastel rainbow layered mocktail that is easy to make, alcohol-free, and perfect for any occasion. It features soft, dreamy layers of fruit juices and syrups for a refreshing and whimsical drink.

Ingredients

Scale
  • 2 oz grenadine syrup
  • 3 oz orange juice (freshly squeezed or store-bought)
  • 3 oz pineapple juice (100% juice preferred)
  • 2 oz blueberry syrup diluted with 1 oz water
  • 3 oz coconut water
  • Ice cubes
  • Optional fresh fruit garnishes: thin orange slices, maraschino cherries, edible flowers

Instructions

  1. Chill all liquids (grenadine syrup, orange juice, pineapple juice, diluted blueberry syrup, and coconut water) beforehand for best flavor and layering.
  2. Fill tall clear glasses about halfway with ice cubes to slow mixing and keep the drink cold.
  3. Slowly pour the grenadine syrup over the ice, letting it settle at the bottom to form the soft pink base layer.
  4. Using a bar spoon, carefully pour orange juice over the back of the spoon onto the ice, pouring slowly to avoid breaking the layer.
  5. Repeat the spoon technique to gently add the pineapple juice, creating a sunny yellow layer above the orange juice.
  6. Gently pour the diluted blueberry syrup over the spoon to create a pastel blue-purple layer.
  7. Slowly pour the clear coconut water as the topmost layer to finish the pastel rainbow look.
  8. Garnish with thin slices of orange, a maraschino cherry, or an edible flower on the rim. Serve immediately with a straw or stir stick.

Notes

Pour slowly over ice using a bar spoon or teaspoon to keep layers distinct. Chill all liquids beforehand and dilute syrups to balance density and sweetness. Ice cubes help prevent layers from mixing. If layers blend, stir and enjoy the combined flavor. For variations, swap juices or syrups to customize colors and flavors. Serve immediately for best presentation.
