  • 1 lb (450g) fresh strawberries, hulled and chopped
  • 2 large lemons, juiced
  • 23 tablespoons honey or agave syrup
  • 2 cups cold water
  • 2 cups chilled sparkling water
  • Ice cubes, as needed
  • Fresh mint leaves, optional for garnish

Instructions

  1. Wash and hull 1 lb (450g) of fresh strawberries, then chop them into smaller pieces.
  2. Add the chopped strawberries and 2 cups of cold water to your blender. Blend until smooth, about 1-2 minutes. If desired, strain the puree through a fine mesh strainer to remove seeds or pulp.
  3. Juice 2 large lemons and pour the juice into the blender with the strawberry puree. Blend for another 30 seconds to combine.
  4. Add 2-3 tablespoons of honey or agave syrup to the blender. Blend again until the sweetener is fully incorporated. Taste and adjust sweetness if necessary.
  5. Transfer the mixture to a pitcher and refrigerate for 1 hour to allow the flavors to meld.
  6. Fill glasses with ice cubes, pour the strawberry mixture about halfway, then top with chilled sparkling water for a fizzy finish.
  7. Add fresh mint leaves and a slice of lemon to each glass for a touch of elegance.

Notes

Use ripe strawberries for the best flavor. Adjust sweetness to taste. Chill ingredients for maximum refreshment. Prepare the base ahead of time and add sparkling water just before serving.
