  • Mint sprigs (optional, for garnish)
  • Pinch of salt (optional, for flavor balance)

Instructions

  1. Toast the coconut flakes in a dry frying pan over medium heat, stirring constantly until golden and fragrant (about 3-5 minutes). Remove from pan and let cool.
  2. Juice the lemons to yield about 1 cup of fresh lemon juice. Strain if desired.
  3. Make simple syrup by combining 1/2 cup sugar and 1/2 cup water in a saucepan or microwave-safe bowl. Heat until sugar dissolves, then let cool.
  4. In a cocktail shaker or large jar, combine lemon juice, cooled simple syrup, and coconut cream. Shake or stir until creamy and well blended.
  5. Add vodka or rum (if using) and shake again.
  6. Fill glasses with ice. Optionally, wet the rim and dip in toasted coconut flakes before adding ice.
  7. Strain the cocktail into glasses. Top with club soda if desired.
  8. Garnish with lemon wheels, a sprinkle of toasted coconut, and mint sprigs.
