  • Juice of 1 large lime (about 1 ounce or 30 ml)
  • 12 tablespoons simple syrup (homemade or store-bought, adjust to taste)
  • 2 ounces white rum (optional, can substitute with vodka or omit for non-alcoholic)
  • 4 ounces soda water or sparkling mineral water
  • Ice cubes (crushed or whole, as preferred)
  • Fresh mint leaves for garnish
  • Optional: splash of orange liqueur or dash of bitters

Instructions

  1. Peel the red dragon fruit and cut it into cubes (about 1 cup or 150 grams). Place the cubes into your blender.
  2. Blend the dragon fruit until smooth and vibrant pink, about 30 seconds. For chunkier texture, pulse in short bursts.
  3. Juice one large lime (approximately 1 ounce or 30 ml) using a citrus juicer or by hand, removing seeds carefully.
  4. In a mixing glass or shaker, combine the dragon fruit puree, fresh lime juice, white rum (2 ounces/60 ml), and simple syrup (1-2 tablespoons or 15-30 ml). Stir or shake gently to blend the flavors.
  5. Fill your serving glass about 3/4 full with ice cubes or crushed ice.
  6. Strain the mixed cocktail over the ice to remove any pulp or seeds for a silky finish.
  7. Add 4 ounces (120 ml) of soda water or sparkling mineral water to the glass. Stir gently to combine without losing bubbles.
  8. Garnish with a sprig of fresh mint and optionally a thin slice of lime or a small dragon fruit wedge on the rim. Serve immediately.

Notes

Do not over-blend the dragon fruit to avoid watery texture. Adjust simple syrup based on sweetness of the fruit. Strain the cocktail for a smoother finish and to remove seeds. Use fresh lime juice for best flavor. For non-alcoholic version, omit rum and add extra soda water or coconut water. Chill glasses ahead for a crisp serving experience.
