A bright, refreshing summer juice combining the natural sweetness of dragon fruit with zesty lime and cooling mint. Easy to make and perfect for hot days.

Ingredients

  • 1 large or 2 small pink-fleshed dragon fruits, peeled and cubed (about 1 ยฝ cups or 250 grams)
  • 2 tablespoons freshly squeezed lime juice
  • 810 fresh mint leaves
  • 12 tablespoons honey or agave syrup (adjust to taste)
  • 1 cup (240 ml) cold water or coconut water
  • Ice cubes as needed

Instructions

  1. Peel the dragon fruit and cut into 1-inch cubes. If using frozen, thaw slightly before blending.
  2. Roll the limes on the counter, cut in half, and squeeze out 2 tablespoons of fresh lime juice, removing any seeds.
  3. Rinse 8-10 fresh mint leaves and pat dry gently.
  4. Add dragon fruit cubes, lime juice, mint leaves, honey or agave syrup, and cold water or coconut water into a high-speed blender.
  5. Blend on high for 45-60 seconds until smooth and vibrant pink with a silky texture.
  6. Taste and adjust sweetness by adding more sweetener if needed; add more water or coconut water if too thick and blend briefly.
  7. Optional: Strain the juice through a fine mesh sieve for a smoother texture.
  8. Serve over ice cubes in tall glasses, garnished with a mint sprig or lime wheel.

Notes

Use ripe dragon fruit for best flavor and texture. Muddle mint leaves with lime juice before blending for extra flavor. Adjust sweetness gradually. Store leftovers in a sealed container in the fridge for up to 2 days and stir before serving. Avoid freezing the blended juice to maintain texture.
