A quick and refreshing summer spritzer combining crisp white wine, fresh peaches, mint, and sparkling water for a light, fruity, and herbaceous drink.

  • 750 ml (25 fl oz) dry or semi-dry white wine (e.g., Sauvignon Blanc or Pinot Grigio)
  • 2 large fresh peaches, thinly sliced (about 300 grams / 10.5 oz)
  • A small handful (about 15 grams) fresh mint leaves, torn gently
  • 500 ml (17 fl oz) sparkling water, chilled
  • 2 tablespoons (30 ml) simple syrup (optional)
  • 1 tablespoon (15 ml) fresh lemon juice (optional)

Instructions

  1. Wash and thinly slice 2 ripe peaches. Removing the skin is optional.
  2. Rinse a small handful of fresh mint leaves and pat dry. Tear the leaves gently into halves or thirds.
  3. In a large pitcher, pour 750 ml (25 fl oz) of chilled white wine. Add the sliced peaches and torn mint leaves.
  4. If desired, stir in 2 tablespoons (30 ml) of simple syrup and 1 tablespoon (15 ml) fresh lemon juice.
  5. Allow the mixture to rest in the fridge for 10-15 minutes to let flavors mingle.
  6. Just before serving, slowly pour in 500 ml (17 fl oz) of chilled sparkling water. Stir gently to combine without losing bubbles.
  7. Fill glasses with ice cubes, then ladle the spritzer over. Garnish each glass with a few peach slices and a sprig of mint.

Notes

Use a crisp, unoaked white wine like Sauvignon Blanc or Pinot Grigio for best results. Avoid overly sweet wines to keep the spritzer light. Tear mint leaves gently to avoid bitterness. Let the mixture rest in the fridge to infuse flavors. Add sparkling water last and stir gently to maintain fizz. Freeze peach slices or mint leaves in ice cubes to keep the drink chilled longer without dilution. Store leftover base (without sparkling water) in the fridge up to 24 hours.
