Witches Brew Lemonade

A magical, color-changing lemonade made with fresh lemon juice, butterfly pea flower tea, and fizzy soda—perfect for Halloween parties and guaranteed to delight kids and adults alike.

  • 1 cup freshly squeezed lemon juice (about 46 lemons)
  • 3/4 cup granulated sugar
  • 4 cups water, divided
  • 2 tablespoons dried butterfly pea flowers OR 2 butterfly pea tea bags
  • 2 cups club soda or lemon-lime soda, chilled
  • Ice
  • Optional garnishes: gummy worms, fresh lemon slices, edible glitter or star sprinkles, fresh mint leaves

Instructions

  1. Prepare the Butterfly Pea Tea: Bring 1 cup water to a boil in a medium saucepan. Add butterfly pea flowers or tea bags and steep for 5–7 minutes until deep blue. Strain out flowers or remove tea bags and let cool completely.
  2. Make Simple Syrup: In the same saucepan, combine sugar with 1 cup water. Heat over medium, stirring until sugar dissolves (about 2–3 minutes). Remove from heat and let cool.
  3. Mix the Lemonade Base: In a large pitcher or cauldron, combine lemon juice, cooled simple syrup, and 2 cups cold water. Stir well and adjust sweetness or tartness to taste.
  4. Chill Everything: Refrigerate the lemonade base and butterfly pea tea separately for at least 1 hour.
  5. Assemble the Witches Brew: Fill glasses with ice. Pour lemonade base into each glass, filling about 2/3 full. Gently pour 2–3 tablespoons of butterfly pea tea over the back of a spoon so it floats on top. Top with a splash of club soda or lemon-lime soda (about 1/4 cup per glass).
  6. Let guests swirl to see the color change. Garnish as desired and serve immediately.

Notes

For the most dramatic color change, use fresh lemon juice and chill all components thoroughly before serving. Pour the butterfly pea tea slowly over the back of a spoon for a layered ombré effect. Only add soda just before serving to keep the fizz. Adjust sweetness after chilling, as cold dulls sweetness. For a grown-up version, add a splash of vodka or gin. Store lemonade base and tea separately in the fridge for up to 2 days.
